Sauteed Chicken Salad

*1 boneless, skinless chicken breast
*1/8th green pepper
*1/8th red pepper
*Romaine lettuce
*Banana peppers
*Cucumber
*Tomato
*Dressing of choice

To make this dish, I chopped up about 1/8th each of a red & green pepper, as well as the chicken breast. Placing it in a small skillet, I sauteed the mixture until there was no pink left in the center of the chicken.

While the chicken and peppers are being sauteed, rinse off your lettuce of choice (I used romaine), and chop it up. Do the same with whatever veggies you’d like, such as: tomatoes, cucumbers, carrots, onions, etc.

Place a little bit of everything on a plate and wa-la! Fresh, homemade salad.  I drizzled a tiny amount of Ranch dressing on top of this and only used 1/2 the chicken/pepper mixture, so I’ll be able to have it again tomorrow.
