Parmesan Chicken

After a long day of work, errands, and perhaps that fitness run you squeezed in last minute, the last thing you want to do when you arrive home is cook. Am I right?

Well, tonight I’ve got you covered. With 6 ingredients, half of them being spices, this will only take you 10 minutes of prep time and you can spend the rest of the night watching the Seahawks take on the Raiders. 🙂

You’re going to love this recipe!


*3 boneless, skinless chicken breasts
*1 cup mayonnaise, I used Hellmann’s
*1 cup shredded parmesan cheese
*3/4 tsp garlic powder
*1/2 tsp cracked pepper
*dash of salt, if desired

Preheat the oven to 375 degrees.  Spray the inside of a 8 x 11.5 inch glass pan with cooking oil.

Clean the chicken breasts of any excess pieces of fat. Rinse the chicken and place in the glass pan.


In a medium bowl, mix together the mayonnaise, 1/2 cup parmesan cheese, garlic powder, salt, and pepper.


Dollop 1/3 of the mixture on each chicken breast. Spread the sauce over each chicken breast, making sure to cover any exposed meat. Sprinkle the remaining 1/2 cup of parmesan cheese on top.


Bake uncovered for 50-60 minutes or until the chicken is cooked thoroughly.


Baker’s Notes:
This recipe creates one of the juiciest chicken breasts I’ve ever tasted. You’ll be amazed at how flavorful the parmesan sauce is, especially since there are only 6 simple ingredients in the sauce! The prep time for this meal took all of 10 minutes and left me ample time to bake up some Rosemary Biscuits and a side of peppered green beans. I hope you love this meal as much as I do!
