White Chicken Chili

Its near the end of the month which means my bank account has dwindled down to basically nothing and its time to raid the pantry and freezer to see what I can cook up. Anyone else in the same boat? 🙂 At least payday is coming closer!! *cheers*

This White Chicken Chili is bound to be one of the easiest meals you’ll ever cook.


I’m not kidding. You’re going to dump everything in the crockpot. EVERYTHING!!  Turn the crock pot up on high (3-4 hours) or low (5-7 hours) and let the slow cooker do all the work. Easiest meal ever!


*1-2 lbs boneless, skinless chicken breasts or chicken tenderloins
*2 onions, chopped
*3 cans great northern beans, rinsed
*1 can green chilies
*1 jar tomatillos
*2 1/2 cups chicken broth
*2 tsp cumin
*2 tsp garlic powder
*1 tsp oregano
*cheese for garnish


Chop the onions into wedges and scatter into the crock pot.

After rinsing the great northern beans, pour them over the onions.

Add the green chilis, tomatillos (I used tomatillos salsa), chicken broth, and the spices.


Clean the chicken breasts or tenderloins of any excess fat and place in the crock pot at the top. Stir the chili well to make sure everything is incorporated.


Turn on the crock pot and enjoy the rest of your day while it does the cooking for you! 🙂

Baker’s Notes:
I was able to get 10 cups out of this recipe, or 5 individual meals, which will taste amazing for as leftovers this week.


For all my THM-ers, this is a solid E-meal! Since I was able to get 5 portions out of this recipe, I was able to get roughly 45g protein, 46g carbs and 1g fat per portion (without cheese). I realize those numbers are a little high for E-meals, but you could eat smaller portions or only use 2 cans of beans instead of 3.

I hope ya’ll enjoy this meal!! I always find it tough to come up with E-meals and this is a delicious way to get some of those in for the week.
