Rainy day + Autumn temps + that cozy feeling caused by hoodies, blankets, and a hot beverage has got me feeling like:
I originally made these delights a few weeks ago and they left my home smelling like an apple pumpkin chai. *sigh* It was ahhhmazingggg!! I wish my home could smell like that for always. In fact, someone should make a candle that smells this good! And then, I would buy all the candles!!
*1/4 cup unsalted butter, softened
*1/2 cup sugar + additional for topping
*1/2 cup brown sugar
*1 tsp vanilla extract
*2/3 cup pumpkin puree
*1/3 cup plain yogurt
*2 TBSP molasses
*1/4 tsp salt
*1 tsp baking soda
*1/2 tsp baking powder
*1 1/2 tsp cinnamon
*1/2 tsp allspice
*1/2 tsp nutmeg
*1/4 tsp ginger
*1/4 tsp ground cloves
*2 cups all purpose flour
*3 apples, peeled and diced
Preheat the oven to 350 degrees.
In a large bowl, cream together the butter, sugar, and brown sugar.
Add in the eggs, vanilla extract, pumpkin puree, yogurt, and molasses. Mix until well incorporated.
Stir in the salt, baking soda, baking powder, cinnamon, allspice, nutmeg, ginger, and ground cloves.
Slowly, add in the flour and stir until the batter is completely mixed together.
Toss the diced apples into the bowl and mix well.
Line a muffin tray with muffin liners. Scoop the batter into the muffin liners, about 3/4 full. Sprinkle sugar on top.
Bake for 30-40 minutes, or until a toothpick inserted comes out clean.
Remove muffins and cool on a wire rack.

These muffins are delicious!!! I couldn’t wait to dig in and they barely cooled on the wire rack for all of a minute before I was taste- testing! 🙂 The spice to sweet ratio was on point and I LOVED the apple chunks; they took this muffin to a whole new, heartier level!
